Senior Sous Chef
Full-Time | The Dart and Marlin – Warrnambool, VIC
The Dart and Marlin is seeking an experienced Senior Sous Chef / Second-in-Charge to join our leadership team in a full-time capacity.
This is a senior kitchen role suited to a chef who can confidently run service, lead the team, and support the Head Chef in delivering consistent, high-quality food in a busy, professional environment.
About the Role
You will play a key leadership role in day-to-day kitchen operations, with responsibility for service leadership, standards, and team supervision.
Key aspects of the role include:
Leading service and running the pass when required
Supervising and supporting kitchen staff on shift
Maintaining food quality, consistency, and presentation
Managing prep, ordering, and stock control
Upholding food safety, HACCP, and compliance standards
Supporting daily organisation and kitchen systems
Acting as Second-in-Charge and stepping up when the Head Chef is absent
Successful applicants will have:
Proven experience as a Sous Chef or senior CDP in a busy venue
The ability to run service without close supervision
Strong leadership and clear communication
Calm, confident decision-making under pressure
High personal standards and accountability
A genuine passion for food, quality produce, and modern restaurant trends
A team-oriented attitude.

Bar Supervisor
The Dart and Marlin is on the look out for FULL TIME BaR SUPERVISOR
About the Role
We are seeking motivated and passionate individuals to join our team at The Dart and Marlin in Warrnambool, Victoria. We’re on the hunt for a full-time Bar Supervisor to work closely with our Venue Manager in coordinating the beverage department while delivering a seamless and rewarding experience for our customers, five nights a week.

We are a small, close-knit team of hardworking and friendly individuals.
Key Details
Shifts will primarily be on weekends and evenings.
Our venue has a loyal customer base who enjoy cocktails alongside their meals or as a stand-alone treat before or after dining. This means the bar can get busy at times.
We have also developed a carefully curated wine list, so a solid foundation in wine knowledge—or a willingness to learn—is essential for delivering exceptional service.
Experience in a busy bar environment is a must, as this role requires confidence and competence from day one.

The Dart and Marlin is on the look out for casual or PART TIME WAIT STAFF
About the role
We are seeking motivated individuals to join our team at The Dart and Marlin in Warrnambool, Victoria. We are on the hunt for both casual and part time staff.
Successful applicants need to have a strong attention to detail, be committed learners and above all else have a desire to establish a welcoming and professional setting for staff and customers. We are a small, strong and friendly team of hard-working individuals.
Weekend and night time work will be the main hours required.
Though experience in a busy hospitality environment is valuable, full on-the-job training will be provided.
We are hoping to hire both casual staff for at least two shifts a week along with permanent part time staff with approximately 25 hours or 4+ shifts a week.
